It's depends on your models.

If you want to build Gundam papercraft, better use Pearl Jasmine paper or Art Paper with 160-210Gsm (grams)

But if you want to build dolls/anime figure papercraft, it's better use Photo InkJet Paper or Pearl Jasmine Paper with 120-150GSM (grams), it need to be more flexible for folding later.

You can also see this photo. It's my works , i was making some model's hand with Jasmine Paper 150GSM. It's easier when folding the paper especially for very small parts
